Garlic Shrimp and Pasta Recipe


Garlic Shrimp and Pasta Ingredients
* 8 ounces linguine or fetuccine
* 1/2 cup chicken broth
* 2 teaspoons cornstarch* 2 cups mushrooms, sliced
* 1 medium bell pepper, chopped
* 1/2 teaspoon dried basil (or 1 tablespoon fresh if available)
* 6 cloves garlic, smashed
* 1 tablespoon olive oil
* 1 can Italian style stewed tomatoes with juice (14 oz)
* 8 ounces cooked shrimp with tails
* 1/4 cup Parmesan cheese, shredded
Directions
1. Cook pasta according to package directions, drain and keep warm.
2 Combine chicken broth cornstarch and basil in a small mixing bowl set aside.
3 Cook mushrooms, sweet pepper and garlic in hot oil until pepper is just tender.
4 Add broth mixture and canned tomatoes, cook and stir till bubbly.
5 Add shrimp, cover and simmer until sauce is heated through (about 2 min.).
6. Top with Parmesan cheese and serve hot.
