Garlic Penne Pasta Ingredients
For the Pasta
* 1 lb. penne pasta
* 2 tablespoons salt
* 1 tablespoon olive oil

For the Sauce
* 1/2 cup extra-virgin olive oil
* 1 oz. fresh basil
* 8 cloves garlic, peeled and sliced thin
* 4 medium Roma tomatoes, cut into 1/2 inch wedges
* salt and pepper to taste
* Grated Parmesan cheese
Directions
1. Boil pasta in salted water until barely tender, about 10 minutes. Scatter pasta over a baking sheet rubbed with olive oil to halt cooking.
Sauce:
1. Heat oil over medium heat and add basil leaves, then garlic, and saute until fragrant but not browned.
2. Add tomatoes, salt and pepper and saute until tomatoes are soft and heated through.
3. Toss the sauce with the pasta and serve with Parmesan cheese on the side to be added as desired.
